Black Bean Salsa
Serves: 8 servings
Ingredients:
• 1 large onion, diced
• 2 to 3 fresh limes, juiced (cut them in half, squeeze halves, save juice)
• ½ tablespoon salt
• 1 ½ cups frozen corn
• 2 cans diced tomato, drained and rinsed
• 2 cans black beans, drained and rinsed
• 1 large green pepper, seeds removed and diced
• 1 tablespoon cilantro
• 1 tablespoon ground cumin
• Hot pepper(s) as desired
Directions:
- In a large bowl, mix together the diced onion, juice of 2 limes, and salt. Let stand at room temperature for 10 to 20 minutes (this will soften the bite of the onion).
- Cook corn according to package directions, drain, and cool
- Put remaining ingredients in the bowl with the onion, lime juice, and salt. Gently toss or stir to mix.
- Taste and add more lime juice, salt, cumin, hot pepper or even more cilantro, if needed.
