Black Bean Salsa

Serves: 8 servings


Ingredients:
•    1 large onion, diced
•    2 to 3 fresh limes, juiced (cut them in half, squeeze halves, save juice)
•    ½ tablespoon salt
•    1 ½ cups frozen corn
•    2 cans diced tomato, drained and rinsed
•    2 cans black beans, drained and rinsed
•    1 large green pepper, seeds removed and diced
•    1 tablespoon cilantro
•    1 tablespoon ground cumin
•    Hot pepper(s) as desired


Directions:

  1. In a large bowl, mix together the diced onion, juice of 2 limes, and salt. Let stand at room temperature for 10 to 20 minutes (this will soften the bite of the onion).
  2. Cook corn according to package directions, drain, and cool
  3. Put remaining ingredients in the bowl with the onion, lime juice, and salt. Gently toss or stir to mix.
  4. Taste and add more lime juice, salt, cumin, hot pepper or even more cilantro, if needed.
