Glorified Macaroni & Cheese

A quick fix to make this ordinary Macaroni & Cheese meal more nutritious and last longer.  Use your favorite vegetables and meat.

Ingredients:

  • 1 pkg.    Macaroni & Cheese
  • 1 cup
  • ½ cup
  • ½ cup    Shredded carrot and zucchini
  • Cubed ham
  • Shredded Part-skim Mozzarella cheese  

Directions:

  1. Prepare dinner in a large saucepan, following the Light Prep directions on the package.
  2. Add vegetables to the boiling water for the last 3 minutes of the macaroni cooking time.
  3. Drain water. Add cheeses, ham, and vegetables.
