Gobo Root
Used in stir-fry, soups, or bake them and eat as a chip. Flavor is similar to an artichoke. Root can be boiled, roasted, stewed, braised or baked.
Preparation:
- Peel skin off if it is thick and rough, but if it is thin you can scrub it and leave it on.
- Soak sliced, shredded, or chopped gobo root in cold water and add a small amount of salt or lemon juice to prevent it from turning brown and to remove any bitterness.
Storage:
It can be stored in the refrigerator for up to 2 weeks. Do NOT WASH until ready to use. Wrap in wet paper towels and seal in a resealable plastic bag.
Nutritional Value:
Good source of fiber and potassium.
