Gobo Root

Used in stir-fry, soups, or bake them and eat as a chip.  Flavor is similar to an artichoke.  Root can be boiled, roasted, stewed, braised or baked.

Preparation:

  1. Peel skin off if it is thick and rough, but if it is thin you can scrub it and leave it on.
  2. Soak sliced, shredded, or chopped gobo root in cold water and add a small amount of salt or lemon juice to prevent it from turning brown and to remove any bitterness.


Storage:
It can be stored in the refrigerator for up to 2 weeks. Do NOT WASH until ready to use. Wrap in wet paper towels and seal in a resealable plastic bag.

Nutritional Value:
Good source of fiber and potassium.
Low in sodium and calories (3/4 cup=60 calories, 0g fat).
