Confetti Macaroni and Cheese

Ingredients:
- 1 pkg. (7-1/2 oz.) Macaroni & Cheese Dinner
- 1 cup each: shredded carrots and zucchini
- 1/2 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
Directions:
- PREPARE Dinner in large saucepan, following the Light Prep directions on package and adding vegetables to the boiling water for the last 3 min. of the Macaroni cooking time.
- STIR in mozzarella.
Mac-a-Taco
Makes: 4 Servings (2 tacos each)

Total Time: 25 min
- 1/2 lb. lean ground beef
- 1 pkg. (7-1/4 oz.) Macaroni & Cheese Dinner
- 1-1/2 cups water
- 1/2 cup Salsa
- 8 Crunchy Taco Shells
- 1/2 cup Shredded Cheddar Cheese
- 1/2 cup chopped tomatoes (optional)
Directions:
- BROWN meat in large skillet on medium-high heat; drain. Add Macaroni, water, salsa and Cheese Sauce Mix; mix well. Bring to boil. Cook on medium-low heat 15 min., stirring occasionally.
- SPOON into taco shells.
- TOP evenly with shredded cheese and tomatoes.
Chicken Italiano Skillet
Makes: 4 Servings

Ingredients:
- 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 green pepper, chopped
- 1 small onion, cut into thin wedges
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1 cup water
- 1 pkg. (14 oz.) Macaroni & Cheese Dinner
Directions:
- COOK and stir chicken in large skillet sprayed with cooking spray on medium-high heat 5 min. or until chicken is no longer pink. Add peppers and onions; cook and stir 5 min. or until chicken is done and vegetables are crisp-tender.
- STIR in tomatoes, water and Macaroni. Bring to boil; cover. Simmer on low heat 10 min. or until macaroni is tender, stirring occasionally.
- ADD Cheese Sauce; stir until blended.
- TIP: Substitute 1 ½ cups of your favorite vegetables or whatever vegetables you have on hand for the peppers and onions as needed or desired
Mac & Cheese Lasagna
Makes: 4 Servings
Prep Time: 20 min.
Total Time: 40 min
Ingredients:
- 1 pkg. (7-1/4 oz.) Macaroni & Cheese Dinner
- 1-1/2 cups spaghetti sauce
- 1/2 lb. lean ground beef
- 1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
- 2 Tbsp. Grated Parmesan Cheese
Directions:
- HEAT oven to 350°F.
- PREPARE Dinner, using the Light Prep directions on package. Meanwhile, brown meat in skillet; drain.
- SPOON half the Dinner into lightly greased 8-inch square baking dish; top with layers of half each sauce, meat and shredded cheese. Repeat layers. Sprinkle with Parmesan.
- BAKE 20 min. or until heated through.
Chili Mac
Makes: 8 Servings (1 cup each)
Total Time: 30 min
Ingredients:
- 2 (7.25oz.) boxes Macaroni and Cheese
- 1 cup milk
- ½ cup (1 stick) Margarine
- 2 (15oz.) cans Chili with Beans
Directions:
- Bring 12 cups water to boil. Stir in Macaroni; cook 12-14 minutes or until tender, stirring occasionally.
- Drain, but do not rinse noodles. Return to pan. Add butter, milk and cheese sauce mix from boxes; mix well.
- Add chili, cook until thoroughly heated, stirring occasionally.
