Mac & Cheese Recipes
Here are a few dishes that can be made with Mac and Cheese:
Speedy Tuna Casserole
This is a Heart Healthy Choice!
Ingredients:
- 1-7 ¼ oz. pkg. macaroni & cheese
- 1 cup frozen mixed vegetables
- 1-16oz. can tuna in water, drained, flaked
- 8 crackers, crushed (optional)
Directions:
1. Prepare dinner in a large saucepan as directed on the package.
2. Add vegetables to the boiling water for the last 2 minutes.
3. Add tuna, mix lightly.
4. Top with cracker crumbs just before serving.
Homemade, Low-fat Macaroni & Cheese
This is a Heart Healthy Choice!
Ingredients:
- ¾ cup milk, fat-free evaporated
- 1 cup cottage cheese, low-fat
- ½ cup cheese, ricotta, low-fat
- ½ cup cheese, cheddar, low-fat
- ½ tsp nutmeg, ground
- 1 dash salt and black pepper, to taste
- 1 tsp cheese, Parmesan
- 1 Tbsp bread crumbs, fine, dry
- 1 pound pasta, elbow macaroni, cooked
Directions:
1. Preheat oven to 350 degrees. Heat milk in a saucepan over low heat.
2. Add the cheeses until they melt, stirring constantly.
3. Stir in remaining nutmeg, pepper, and salt.
4. Remove the cheese sauce from the heat. Add the cooked pasta to the cheese sauce and mix well.
5. Pour the mixture into a 2 qt. casserole dish. Sprinkle with Parmesan cheese and bread crumbs.
6. Bake the casserole for 15-20 minutes until bubbly and the top is browned.
Glorified Macaroni & Cheese

Ingredients:
- 1 pkg. Macaroni & Cheese
- 1 cup Shredded carrots and zucchini
- ½ cup Cubed ham
- ½ cup Shredded Part-skim Mozzarella cheese
Directions:
1. Prepare dinner in a large saucepan, following the Light Prep directions on the package.
2. Add vegetables to the boiling water for the last 3 minutes of the macaroni cooking time.
3. Drain water. Add cheeses, ham, and vegetables.
