Peanut Butter Recipes

“Nut-za-Bout” Pizza

This is a Heart Healthy Choice! 

Ingredients:  

  • 1 flour tortilla    
  • 1 Tbsp creamy peanut butter
  • ¼ cup sliced strawberries
  • ¼ cup blueberries
  • ½ tsp powdered sugar

Directions:

  1. Spread tortilla with peanut butter
  2. Top with fruit; sprinkle with sugar
  3. Cut into wedges to serve.

 


PB and Apple Wrap

This is a Heart Healthy Choice!    

Ingredients:

  • 1 flour tortilla
  • 1 Tbsp Low-Fat Cream Cheese, softened
  • 1 Tbsp Reduced-fat peanut butter
  • ½ a medium apple, sliced (about ½ cup)

Directions:

  1. Spread tortilla evenly with cream cheese and peanut butter.
  2. Top with apples.
  3. Roll up and serve. Or, roll up, wrap tightly in plastic wrap and refrigerate until ready to serve.    




Terrific Tortilla Coins

Ingredients:

  • 1 whole wheat tortilla (6 inch)
  • 1 Tbsp Reduced-fat peanut butter
  • 1 medium banana

Directions:

  1. Spread one side of the tortilla with peanut butter.
  2. Place banana on edge of tortilla and roll tortilla around it.
  3. Cut into half-inch slices to form coins. Then roll in plastic wrap and refrigerate for later.




Easy Chicken Skewers with Peanut Sauce
      
This is a Heart Healthy Choice!

Ingredients:

  • ¼ cup Reduced-fat Catalina dressing
  • 3 Tbsp Reduced-fat peanut butter
  • 1 Tbsp low-sodium soy sauce
  • 1 pound boneless, skinless chicken breast, cut into lengthwise slices
  • 2 Tbsp dry roasted, lightly salted peanuts, chopped
  • ¼ cup chopped green onions (about 1 medium) optional

Directions:

  1. Mix dressing, peanut butter, and soy sauce in a large bowl until well blended.
  2. Add chicken; toss to coat.
  3. Cover; refrigerate 10 minutes to marinate.
  4. Preheat broiler. Remove chicken from marinade; discard marinade.
  5. Thread chicken evenly onto eight soaked wooden or metal skewers. Place on rack in broiler pan*.
  6. Broil, 4-6 inches from the heat, 4 minutes on each side or until cooked through.
  7. Serve sprinkled with peanuts and onion.

*May also cook over the grill.
