Sauerkraut
Ham & Swiss Reuben Roll-Ups
Total Time: 10 minutes
Makes: 1 serving, three roll-ups
Ingredients:
- 6 slices Smoked Ham
- 1 Tbsp. Light Thousand Island Dressing or Dijon mustard
- 1 Tbsp. Sauerkraut, drained
- 1 piece of Swiss cheese
Directions:
- Flatten ham slices; pat dry.
- Stack 2 of the ham slices; spread with 1 tsp dressing.
- Top with 1 tsp of sauerkraut and a piece of Swiss cheese; roll up. Secure with toothpick, optional.
- Repeat steps with the remaining ingredients.

Baked Pork Chops with Sauerkraut
Total Time: 2 hours
Makes: 6 servings, 1 chop each
Ingredients:
- 6 boneless, pork loin, chops
- 3 tbsp. olive oil
- 2 tbsp. mustard
- 2 tbsp. brown sugar
- 2 lg. apples, cored and sliced 1/2 inch thick
- 1 (16 oz.) can sauerkraut, rinsed, drained
Directions:
- Brown pork chops on both sides in oil.
- Blend mustard with brown sugar; spread on chops.
- Arrange apple slices over chops; cover with sauerkraut.
- Bake, covered, in a square casserole dish at 325 degrees for 1 ½ hours or until chops are tender.
- Garnish with apple wedges if desired.
