Tuna-Stuffed Tomatoes

This is a Heart Healthy Choice!

Makes 4 servings, 1 stuffed tomato each

Ingredients:

  • 2-6oz. cans tuna in water, drained, flaked    
  • 1/3 cup light mayo or miracle whip    
  • 1 stalk celery, finely chopped    
  • ¼ cup chopped pitted ripe olives Grated peel and juice from ½ a medium lemon    
  • 4 medium tomatoes    
  • Unsalted saltine crackers    

Directions:

  1. Mix tuna, mayo, celery, olives, onion, lemon peel and juice.
  2. Cut each tomato into wedges, cutting down to within ½ inch of the bottom.
  3. Spoon tuna with crackers.




Tuna Salad Sandwich

Ingredients:

  • 1-6oz. can tuna in water, drained, flaked    
  • ½ cup shredded carrot    
  • ¼ cup light mayonnaise    
  • 1 Tbsp. sweet pickle relish    
  • 1 Tbsp. raisins    
  • 6 slices whole wheat bread        
  • 3 large lettuce leaves    

Directions:

  1. Mix tuna, carrot, mayo, relish, and raisins. 
  2. Cover 3 of the bread slices with the tuna mixture.
  3. Top with lettuce and remaining bread slices.

 


                
Apple Almond Tuna Salad

Ingredients:

  • 2-6oz. cans tuna in water, drained    
  • ¼ cup light mayonnaise    
  • ¼ cup almonds, chopped    
  • 1 green apple, cut into ¼ cubes    
  • 4 cups romaine lettuce    

Directions:

  1. Combine tuna, mayo, almonds, and apple.
  2. Serve over letuce.

 

 

Speedy Tuna Casserole

Ingredients:

  • 1-7 ¼ oz. pkg. macaroni & cheese    
  • 1 cup frozen mixed vegetables    
  • 1-16oz. can tuna in water, drained, flaked    
  • 8 crackers, crushed    

Directions:

  1. Prepare dinner in large saucepan as directed on package, add vegetables to the boiling water for the last 2 minutes.
  2. Add tuna, mix lightly.
  3. Top with cracker crumbs just before serving.

 

 

Tuna Casserole

Ingredients:

  • 3 eggs    
  • ¾ cup low-fat milk    
  • 1-6oz. pkg. stuffing mix for chicken    
  • 1 ½ cups shredded cheese (Colby, Monterey jack)    
  • 1 cup green peas    
  • 1-6oz. can of tuna in water, drained, flaked    
  • ½ cup low sodium condensed cream of mushroom soup    
  • ¼ cup green onion slices (optional)    
  • 2 Tbsp. chopped pimiento (optional)    

Directions:

  1. Beat eggs and milk in large bowl with wire whisk until well blended.
  2. Stir in stuffing mix, 1 cup of cheese, peas, tuna, soup, onion and pimiento until well blended.
  3. Spoon into greased 9-inch microwaveable pie plate. Cover loosely with wax paper. Microwave on HIGH 5 minutes.
  4. Stir thoroughly, cover and heat additional 5 minutes or until center is no longer wet.
  5. Sprinkle with remaining ½ cup cheese; cover. Let stand 5 minutes.


  

Tasty Tuna BLT

  • 1-12 oz. can tuna in water, drained,  flaked    
  • ¼ cup light mayo or Miracle Whip

  • 4 lettuce leaves
  • 12 slices turkey bacon, cooked    

Directions:

  1. Mix tuna, dressing and tomatoes.
  2. Cover 4 of the toast slices with lettuce and bacon.
  3. Top with tuna mixture and remaining toast slices.
