Tuna-Stuffed Tomatoes

Ingredients:
- 2-6oz. cans tuna in water, drained, flaked
- 1/3 cup light mayo or miracle whip
- 1 stalk celery, finely chopped
- ¼ cup chopped pitted ripe olives Grated peel and juice from ½ a medium lemon
- 4 medium tomatoes
- Unsalted saltine crackers
Directions:
- Mix tuna, mayo, celery, olives, onion, lemon peel and juice.
- Cut each tomato into wedges, cutting down to within ½ inch of the bottom.
- Spoon tuna with crackers.
Tuna Salad Sandwich

- 1-6oz. can tuna in water, drained, flaked
- ½ cup shredded carrot
- ¼ cup light mayonnaise
- 1 Tbsp. sweet pickle relish
- 1 Tbsp. raisins
- 6 slices whole wheat bread
- 3 large lettuce leaves
Directions:
- Mix tuna, carrot, mayo, relish, and raisins.
- Cover 3 of the bread slices with the tuna mixture.
- Top with lettuce and remaining bread slices.
Apple Almond Tuna Salad

Ingredients:
- 2-6oz. cans tuna in water, drained
- ¼ cup light mayonnaise
- ¼ cup almonds, chopped
- 1 green apple, cut into ¼ cubes
- 4 cups romaine lettuce
Directions:
- Combine tuna, mayo, almonds, and apple.
- Serve over letuce.
Speedy Tuna Casserole

Ingredients:
- 1-7 ¼ oz. pkg. macaroni & cheese
- 1 cup frozen mixed vegetables
- 1-16oz. can tuna in water, drained, flaked
- 8 crackers, crushed
Directions:
- Prepare dinner in large saucepan as directed on package, add vegetables to the boiling water for the last 2 minutes.
- Add tuna, mix lightly.
- Top with cracker crumbs just before serving.
Tuna Casserole

Ingredients:
- 3 eggs
- ¾ cup low-fat milk
- 1-6oz. pkg. stuffing mix for chicken
- 1 ½ cups shredded cheese (Colby, Monterey jack)
- 1 cup green peas
- 1-6oz. can of tuna in water, drained, flaked
- ½ cup low sodium condensed cream of mushroom soup
- ¼ cup green onion slices (optional)
- 2 Tbsp. chopped pimiento (optional)
Directions:
- Beat eggs and milk in large bowl with wire whisk until well blended.
- Stir in stuffing mix, 1 cup of cheese, peas, tuna, soup, onion and pimiento until well blended.
- Spoon into greased 9-inch microwaveable pie plate. Cover loosely with wax paper. Microwave on HIGH 5 minutes.
- Stir thoroughly, cover and heat additional 5 minutes or until center is no longer wet.
- Sprinkle with remaining ½ cup cheese; cover. Let stand 5 minutes.
Tasty Tuna BLT

- 12 slices turkey bacon, cooked
Directions:
- Mix tuna, dressing and tomatoes.
- Cover 4 of the toast slices with lettuce and bacon.
- Top with tuna mixture and remaining toast slices.
